Ingredients: 1 1/2 cups maple syrup 1/2 cup safflower oil 1/2 cup Flax Egg Replacer 1/2 cup soy milk 2 teaspoons vanilla 2-3/4 cups spelt flour 1/2 cup cocoa 1/2 teaspoon sea salt 3/4 cup chopped walnuts 3/4 cup vegan chocolate chips, preferably fruit-sweetened Directions:1. Preheat oven to 350?. Lightly oil or line a baking sheet with parchment. 2. In a large bowl, whisk together syrup, oil, egg replacer, soy milk, and vanilla. Stir in flour, cocoa, salt, nuts, and chocolate chips and mix well. 3. Spoon or scoop rounded tablespoonfuls onto prepared sheet. Bake about 12 minutes, until cookies are shiny and set, but not dry.
