Ingredients: 1 cup sifted whole wheat pastry flour 1/2 cup granulated sugar cane juice or brown sugar 1/2 cup rolled oats 1 tsp crushed cardamom seeds or ground cardamom 1/4 tsp baking soda 3 Tbs diced chilled unsalted butter or margarine 1 oz semi-sweet chocolate, melted for garnish (optional)
Directions: Pre-heat oven to 350 degrees. Spray 8 by 11 inch or 9 by 12 inch baking dish with cooking spray. Combine all ingredients except butter and chocolate in a food processor. Pulse to mix and pulverize oats. Add butter and process until mixture is crumbly. Sprinkle evenly into pan. With the back of a large spatula or with your fingers, press dough evenly and firmly into pan. Bake until golden, 17-20 minutes. Cut into 1 1/4 inch squares while hot. Cool in pan on rack.
