Ingredients: 2 cup brown sugar 1 cup butter 3 eggs 1 tsp. soda 3&1/2 cup flour pinch of salt 2 cups ground dates 1/2 cup sugar 1 cup chopped or ground nuts 1 eggalt Directions:mix together and pat into rolls about 2 inches in diameter. Refrigerate. Slice very thin. Put out on greased cookie sheet. Put on a dab of filling, then put another thin layer of cookie dough on top. Press edges together slightly FILLING Cook in top of double boiler for a bit (til egg would be done). Remove from fire. Add: 1 Tbsp. lemon juice 2 Tbsp butter dash of salt Allow to cool and use for the filling for the cookies. This may be varied in any way you choose - use raisins, instead of dates. May use both. Try using some figs and you can even leave out the nuts, if you so desire. Bake at 325 degrees until done. |
