Strips of bread (best with left over bread crusts...can be stale or fresh)
1/2-1 cup milk
dash of salt
1/2 teaspoon vanilla
1/4 cup honey
juice from 1/2 orange
oil or non-stick cooking spray
Beat eggs, milk, vanilla and salt in a medium sized bowl. Heat a frying pan with the oil. When the pan is hot, at the bread strips and cook for one minute. Stirring the bread, slowly add the egg mixture. Heat the honey in a separate container in the microwave until very soft (20-30 sec). Pour on the bread mixture. Occasionally stirring, fry the bread on medium heat for 3-5 minutes or until dry ang golden brown. About one minute before the bread is ready, squeeze half of an orange on top (or use 2 tablespoons orange juice).
Put on a plate and enjoy as breakfast or a snack. Also good when dipped in honey, jam, or maple syrup.
