Ingredients: 1 1/2 lemons 2 ripe avocados 2-3 tablespoons powdered sugar pinch nutmeg 2 tablespoons of kirsch or blackberry wine or juice Directions:Cut 1 lemon in half, Reserve. Squeeze juice from remaining lemon half. Cut 1 avocado in half. remove pit. Rub immediately with cut lemon, Squeezing some juice over each half. Cut out pulp with a knife or scoop it out carefully with a teaspoon. Dice it quickly and mix with 1 teaspoon lemon juice. Follow the same procedure woth the second avocado. Sprinkle avocado pulp with sugar and nutmeg. Moisten with kirsch. Gently stir to blend seasoning and flavoring. It may need a little more lemon juice or sugar. It should be tartish, neither sweet nor very tart. Cover and chill for several hours. Serve very cold in a glass dish as is or with lemon flavored cookies. |
