Ingredients: 1/2 cup water 2 tablespoons currants 1/3 cup couscous 1 teaspoon olive oil Pinch curry powder 2 tablespoons toasted pine nuts Salt to taste Raddiccio, lettuce, and/or large spinach leaves, washed and dried
Directions:1. In a small bowl, combine water and currants. Microwave on high for 45 seconds. 2. Stir in couscous, olive oil, and curry powder. Let sit for 10 minutes. Stir in pine nuts. 3. Fill each leaf with about 1 tablespoon of couscous and fold over sides to form a packet. Secure packets with toothpicks, if desired. |
