Ingredients: 7 plum tomatoes, seeded and chopped 1 bunch green onions, thinly sliced 1 jalapeno pepper, seeded and minced 2 garlic cloves, minced 2 tablespoons cilantro, chopped 1 can black-eyed peas, rinsed and drained 3 tablespoons lime juice 1/2 teaspoon salt 1/2 teaspoon ground cumin 1 teaspoon olive oil
Directions:Stir together all ingredients in a large bowl. Cover and chill at least 30 minutes. Garnish, if desired. Serve with tortilla chips. |
