1 tablespoon of lemon juice
50 ml cream
1 tablespoon of mayonnaise
8 king prawns, cooked and shelled
125 gm Brie cheese, sliced into 8 slices
1. Peel and stone the avocados. Puree one of them in a blender or food processor with the lemon juice, cream and mayonnaise. Slice the remaining avocado into 8 slices.
2. Arrange the avocado slices, prawns and brie alternately on a bed of lettuce leaves. Serve topped with the avocado cream mixture.
