2 12-oz cans (or 2 1-lb boxes - fresh) mushrooms
2 medium onions, chopped finely
1 12-oz can tomato sauce
oil (vegetable or olive)
salt, pepper, finely chopped fresh parsley as much as desired
Saute the chopped onions in oil till tender and lightly colored. Chop the fresh mushrooms or just add the canned mushrooms and saute them also. Add a little water and boil till they become very tender and darker. Add tomato sauce, salt, and pepper. Boil them together until the sauce is thick. When ready add the fresh parsley.
