Ingredients: 2- 1 1/2 lb. lobsters, precooked with meat removed from shell 1 lb monkfish or other firm fish, cut into 1-inch pieces 1 cup mashed potatoes 1 Tbsp. olive oil 1 tsp. paprika 1/2 onion, chopped 3 cloves caramelized garlic 2 plum tomatoes, chopped 1/4 cup tomato sauce 1/2 cup white wine 1 tsp. fresh thyme pinch nutmeg 2 baking potatoes sliced paper-thin lengthwise 2 cups fish, vegetable or chicken broth
Directions:Preheat a saute pan. Add olive oil, onion, garlic and tomatoes. Cook 2-3 minutes. Add paprika, white wine and tomato sauce. Cook 2 minutes. Add broth, thyme and nutmeg. Whip in mashed potatoes to thicken. Stir in lobster and monkfish. Pour in a pie plate or casserole. Lay potato slices on top, brush with olive oil. Bake in a 350 degree oven or on a medium grill for 20 minutes. |
