Ingredients: 1 pound shrimp, peeled deveined and marinated 1/4 cup black beans 1/4 cup corn 2 green onions, chopped 6 jalapeno pepper, grilled and sliced 1 cup marinated plum tomatoes and red onion salad 4 cups warm tortilla chips (assorted, blue corn, red corn, and yellow corn) 1 Tbsp. Cilantro, roughly chopped 2 cups escarole Shrimp Marinade: 1/2 cup lime juice 2 oz Tequila 2 Tbsp. cilantro 1 head caramelized garlic 1 Tbsp. hot sauce 1 tsp. cumino 2 Tbsp. corn syrup Directions:1. Marinate shrimp for 10 minutes, drain and save marinade. Preheat saute pan and grill. Bring marinade to a quick boil. Add shrimp and cook on high heat for 4-5 minutes or until shrimp is cooked. 2. Top warm nachos with black beans, corn, green onions, jalapenos, plum tomato salad and cooked shrimp. Serve with shredded escarole. Shrimp Marinade: In a medium bowl, combine all ingredients. Add shrimp and allow to marinate 20 minutes in the refrigerator. |
