Ingredients: 1 1/4 pound lobster, cooked and removed from shell 6 slices of firm white bread 4 slices sliced gruyere cheese 1 tablespoon olive oil option: 1/4 pound shrimp, boiled and peeled Egg Batter: 3 eggs, beaten 2 tablespoons milk 4 crushed caramelized garlic cloves teaspoon each thyme, paprika, and rosemary pinch nutmeg Directions:Beat all ingredients. Slice lobster tail meat into small pieces. Make triple-decker club sandwiches out of the bread, cheese, and lobster slices. Press sandwiches with a flat plate. Mix egg batter. Preheat a griddle or sautй pan with 1 Tbsp. olive oil. Dip sandwiches in batter and cook on the griddle or sautй pan, turn after two minutes or when the sandwiches are light brown and the cheese has softened. Sandwiches may also be baked after they are lightly browned to further melt cheese inside sandwiches. Remove when cheese is softened, cut into four pieces. |
