Ingredients: 4 Golden Eggs salt and pepper 4 slices Parma ham, cut in strips 4 slices cooked ham, cut in strips or 8 slices cooked ham, cut in strips 2 tbs cream cheese Sauce: 4 tomatoes few drops chilli sauce 1 tbs red wine vinegar
Directions:1. Line 4 individual dishes or ramekins with plastic film. 2. Beat eggs in a deep bowl until very frothy. Season with salt and pepper. 3. Soften the cream cheese then beat into the eggs. Add ham (reserve some strips for garnishing). 4. Divide mixture between the dishes. Microwave on medium (50%) power for 6 minutes or until firm. 5. Warm tomato sauce in the microwave. Put spoonfuls onto individual plates, unmould shapes and place on sauce. Garnish with reserved ham strips. Sauce: Blanche tomatoes by placing in boiling water 2 minutes then plunging into cold water for a further 2 minutes. Cut in half. Squeeze to remove seeds. Chop tomatoes finely - microwave 1 minute to soften tomatoes. Stir, add chilli sauce and red wine vinegar. Microwave 20 seconds (sauce may be chunky or blended to a puree if preferred). |
