1 pound shrimp, preferrably unpeeled
1 garlic clove, minced, or one tablespoon finely chopped onion
1 bay leaf, crushed
1/2 teaspoon celery seed
2 tablespoons lemon juice
1. In a 9- or 10-inch round microwaveproof cooking dish combine all the ingredients. Stir to coat the shrimp, then push the shrimp to the outer rim, leaving the center open.
2. Cover tightly and cook on HIGH (100%) for 2-1/2 to 6-1/2 minutes, or until the shrimp turn pink, stirring after 2 minutes to move the lesser cooked shrimp to the outisde. Let stand, covered, for 2 to 3 minutes. Serve hot, or chill and serve, in shells or shelled, with cocktail sauce, horseradish, or whatever you please.
