Ingredients: 1 teaspoon olive oil 1 large onion, chopped (about 1 cup) 2 16-ounce cans black beans, undrained 1 8-ounce can tomato sauce 1/2 teaspoon dried oregano leaves 1/8 teaspoon cayenne pepper (optional) 1/2 cup lean smoked ham, cubed (2 ounces)
Directions:1. In 1-quart microwave-safe dish with lid, pour in oil and chopped onion. Microwave on high for 1 minute. 2. Stir in the canned black beans with their liquid, the tomato sauce, the dried oregano, and the cayenne pepper, if using. Cover and microwave on high 8 to 10 minutes or until heated through. Remove from microwave and stir in the ham. 3. Garnish with chopped green onions, sour cream, and salsa, if desired. |
