Ingredients: 6 eggs 1/2 cup lime juice 1/2 cup sugar 1 can condensed milk 1 cup freshly grated coconut 1 lightly browned pie shell
Directions:Beat the yolks of 4 eggs and 2 whole eggs. Reserve the whites of 4 eggs for meringue. Add the condensed milk to the egg yolk and mix well. Add the lime juice, mix and fold in the fresh coconut. Pour into pie shell and bake 5 minutes at 200 C. Beat the egg whites until foamy. Add the sugar gradually and continue beating until the whites are stiff. Remove pie from oven and cover with meringue. Bake 4-5 minutes until meringue is golden brown. |
