Ingredients: 50 g (1-3/4 oz) long grain brown rice salt 175 g (6 oz) plain cottage cheese pinch of cayenne pepper 410 g canned pears in natural juice, drained and chopped 2 bunches of watercress, trimmed fat free French dressing Time: 30 min
Directions:1. Cook the rice in boiling salted water. Drain and leave to cool. 2. When the rice is cold, mix the cheese, cayenne pepper and pears together and add to the rice. 3. Arrange the watercress in a ring on a flat dish and pile the rice mixture in the centre. 4. Chill for 15 minutes before serving with fat free French dressing. |
