2 medium oranges
1 medium grapefruit
285 g (10 oz) bag mixed salad greens
1 medium onion, sliced
2 medium carrots, julienned
40 g (1 1/2 oz) walnuts, toasted
1 1/2 teaspoons olive oil
1 tablespoon raspberry vinegar
25 g (1 oz) basil leaves, shredded
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
Time: 15 min
1. Using a serrated knife, remove the peel from the oranges and the grapefruit. Section the fruit over a bowl to collect juices. Reserve 50 ml of the juice.
2. In a large bowl, combine the fruit with the remaining salad ingredients.
3. In a separate bowl whisk the dressing ingredients with the reserved fruit juice until well blended. Pour over the salad. Toss well before serving.
