Ingredients: 2 large Spanish onions low-fat cooking spray 10 sun-dried tomatoes (not packed in oil) 85 g Stilton cheese large, uncooked (225g) thin and crispy pizza base 10 medium spinach leaves, washed and dried freshly ground pepper to taste Time: 35 min
Directions:1. Slice onions into thin strips. Spray large non-stick pan with cooking spray and saute over medium heat. Add onions and reduce heat to medium-low. Cook for 15 to 20 minutes, stirring frequently, until brown and very fragrant. 2. Mince tomatoes and crumble cheese. Tear spinach into pieces. Preheat oven to 425 F (220 C) 3. Spread caramelised onions on pizza base and bake for 12 minutes. Remove from oven and add tomatoes, spinach and cheese. Bake until cheese is melted, about 3 more minutes. Season with freshly melted ground black pepper and serve. |
