Ingredients: 127 g pack of pancake batter mix 1 teaspoon vegetable oil 1 egg 450 jar Homepride 99% fat free Creamy Curry Sauce 450 g cooked chicken, chopped 1 ripe mango, chopped 2 spring onions, chopped 3 firm tomatoes, sliced
Directions:1. Make the pancake batter according to the pack instructions, adding the egg. Wipe, as required, a dab of oil around the inside of a small non stick omelette pan and make 6 pancakes. Wrap the cooked pancakes in foil and keep warm under a low grill setting. 2. Gently heat the curry sauce in a saucepan and add the cooked chicken. Heat thoroughly, stirring, until piping hot. 3. Fold in the mango pieces and spring onions. Divide the filling between the pancakes. Fold into neat squares and arrange on a foil lined grill pan. Top each pancake with slices of tomato. 4. Heat through under the grill until the tomatoes are lightly cooked and the pancakes are hot. |
