450 g green gooseberries
1 elderflower head (optional)
artificial sweetener, to taste
200 ml low-fat plain fromage frais
1. Put the gooseberries (no need to top and tail), elderflower head and 5 tablespoons of water into a pan. Bring to the boil and simmer for 10 minutes, until the gooseberries are mushy.
2. Remove the flowerhead, if used, and rub the gooseberries through a sieve into a bowl.
3. Sweeten to taste and leave to cool.
4. Stir in the fromage frais, until well blended. Spoon into serving dishes and eat immediately.
