1/2 cup thinly sliced onion
2 tablespoons olive oil or oil
1 cup sliced mushrooms
1 cup sliced green or red peppers
1 cup sliced zucchini
1/2 teaspoon crushed basil
1/4 cup chopped shelled pistachios
Stir-fry onion in oil until tender. Add mushrooms, pepper, zucchini and basil; stir-fry until crisp-tender. Add pistachios and salt to taste; mix well.
