Ingredients: 1 medium onion, thinly sliced 1 tbsp vegetable oil 175 g lean stewing beef (trimmed of fat and gristle) 175 g carrots, peeled and sliced 225 g potato, chopped sprig of parsley 300 ml unsalted beef or chicken stock (or water and some mixed herbs) Directions:1. Saute the onion in the vegetable oil until softened. Add the meat and saute until browned. 2. Put the onion and beef into a casserole dish and add the carrots, potato, parsley and stock. Bring to the boil and then cover and cook in an oven pre-heated to 350 F or 180 C for 1 1/2 hours. 3. Blend to a puree of the desired consistency. |
