Ingredients: 1 tbsp vegetable oil 25 g onion, finely chopped 15 g celery, finely chopped 25 g carrots, finely grated 125 g lean minced beef 1/2tsp tomato puree 2 ripe tomatoes, skinned, de-seeded and chopped 80 ml chicken stock 45 g spaghetti Directions:1. Warm the oil in a pan, add the onion and celery and saute for 3 to 4 minutes. 2. Add the grated carrots and cook for 2 minutes. 3. Add the minced beef and stir until browned. Stir in the tomato puree, tomatoes and stock. Bring the mixture to the boil, reduce the heat, cover and cook for 10 to 15 minutes, or until the meat is cooked through. 4. Meanwhile, bring a pan of water to the boil, add the spaghetti and cook until soft - about 10 minutes. 5. Drain and mix with the bolognese sauce. |
