Ingredients: 75 g basmati rice 1 onion, peeled and chopped vegetable oil for frying 225 g lean minced beef 1/2 red pepper, de-seeded and chopped 1 tbsp fresh chopped parsley 1 tbsp tomato ketchup 2 tomatoes, skinned, de-seeded and chopped 75 g frozen peas 175 ml chicken or vegetable stock 120 ml pure apple juice Directions:1. Cook the rice in boiling water until tender. Drain well. 2. Saut the onion in the oil for 2 to 3 minutes. Add the minced meat and cook, stirring until browned. Add the sweet pepper, parsley, tomato ketchup and for babies over one year a little salt and pepper and cook for 3 to 4 minutes. Add the tomatoes and frozen peas, pour over the stock and apple juice, cover and simmer for about 15 minutes. 3. Stir in the cooked rice 5 minutes before the end of the cooking time. |
