Ingredients: 4 medium potatoes, peeled, cubed, boiled and mashed 3 tablespoons olive oil for roasting 2 medium red capsicums 8 cloves garlic extra light olive oil Fresh chives, chopped 40 g shaved Parmesan Salt and pepper Time: 50 min Directions:1. Pour the olive oil and cloves of garlic into an oven-proof dish and place in a 190 C pre-heated oven for 20 minutes. When cool, remove garlic clove skins and mash. 2. Gently warm the extra light olive oil and mashed garlic, then whip the mixture through the mashed potatoes and season. 3. Cut the capsicum in half lengthways, hollow out and fill with potato mash and bake in a 190 C oven for 10-15 minutes. 4. Garnish with chives, shaved Parmesan and freshly ground black pepper. |
