Ingredients: 2 cups sifted flour 3 tsp baking powder 1 tsp sugar 1/2 tsp salt 1/2 cup chopped cracklings or crisp chopped bacon 3 tbsp melted crackling or bacon fat 2 eggs 1/3 cup cream Caraway seeds Directions:1. Sift the flour with the dry ingredients twice. Mix in the cracklings or bacon and the melted fat. Beat the eggs and reserve 2 tablespoons for glazing. To the remaining portion of the eggs, add the cream and stir into the flour mixture with a few swift strokes. 2. Handle the dough as little as possible. Place on a slightly floured board and pat to about 3/4 inch in thickness. Cut into diamonds with a knife, or into rounds with a cooky cutter. 3. Place on a greased baking sheet, brush with the reserved egg, and sprinkle lightly with the caraway seed. Bake in a very hot oven (450 F) for 10 to 12 minutes. |
