3 eggs, beaten
1/3 cup white sugar
salt to taste
2 1/2 cups milk
1 teaspoon vanilla extract
1 cup heavy whipping cream
2 tablespoons confectioners` sugar
1/2 teaspoon vanilla extract
1/2 cup rum (optional)
2 drops yellow food coloring
1 pinch ground nutmeg
1.Mix eggs, sugar, and salt in a heavy 2 quart saucepan; gradually stir in the milk. Cook over medium heat 10 to 15 minutes, stirring constantly, until mixture just coats a metal spoon.
2.Remove from heat and stir in vanilla. Place saucepan in cold water until custard cools.
3.Just before serving blend together the cream, confectioners sugar and vanilla. Beat on high speed until stiff.
4.Stir in rum and yellow food color and mix whipped mixture into the custard. Pour into serving bowl and sprinkle with nutmeg. Refrigerate any leftover amount.
