Ingredients: 13 oz dried white (navy) beans, soaked overnight 1 onion, peeled and chopped 4 cloves garlic, peeled 1 bay leaf Salt 1/4 cup olive oil 2 tablespoons white wine vinegar
Directions:1. Put the beans in a pan with water to cover. Bring to a boil, then drain and heat again with cold water. 2. Add the onion, garlic and bay leaf, and simmer gently until the beans are tender (1 1/2-2 hours). Add salt toward the end of the cooking time. Drain and dress with the oil and vinegar. Serve at room temperature. |
