Ingredients: 6 ounces of cucumber, peeled and cut into twelve 1/2 inch slices 1 tablespoon of finely chopped fresh cilantro 2 tablespoons of reduced sodium soy sauce 2 tablespoons of rice vinegar 3/4 teaspoon of sugar 3/8 teaspoon of white pepper One 6 ounce can of crabmeat, drained and picked over Paprika for garnish, optional Directions:Carefully hollow out a shallow well in each cucumber slice, taking care to leave the bottoms intact. In a mixing bowl, combine the cilantro, soy sauce, vinegar, sugar, and white pepper. Add the crabmeat and mix thoroughly. Mound a tablespoon of the mixture into each cucumber. Dust, if desired with paprika. |
