Ingredients: 4 medium skinless, boneless chicken breast halves Several dashes of paprika Nonstick cooking spray 3 ounces of frozen orange juice concentrate, thawed 2 teaspoons of snipped fresh rosemary or thyme Directions:1. Rinse the chicken and pat dry with paper towels. Sprinkle with paprika. Spray an unheated nonstick skillet with nonstick coating. Preheat over medium heat. 2. Add the chicken and cook for about 4 minutes or until brown, turning once. Meanwhile, for the glaze, stir together the orange juice concentrate and herb. Spoon over the chicken. Cover and cook for 5 to 6 minutes more or until the chicken is tender and no longer pink. To serve, spoon the glaze over the chicken. |
