Ingredients: 1/4 cup of bread crumbs 1 tablespoon of chopped fresh flat leaf parsley 1 teaspoon of paprika 1/2 teaspoon of grated lemon zest Olive oil cooking spray 8 ounces of bay scallops Directions:1. Preheat a boiler. 2. In a bowl, combine the bread crumbs, parsley, paprika and lemon zest. Mix well. 3. Spray four 2 to 3 ounce gelatin dishes or ramekins lightly with olive oil and place them on a baking dish. 4. Put 1/4 cup of scallops in each ramekin and top with 4 teaspoons of the bread crumb mixture. 5. Broil until the topping is well browned and steaming and the scallops are firm to the touch and opaque, usually about 5 minutes. |
