Ingredients: medium sized mushroom caps small pieces of Swiss or other quality cheese drizzles of fresh pesto, or a bottled pesto mix Directions:Carefully brush the mushrooms, removing the stems and reserving for another use. Place caps on a paper towel- lined plate and put a piece of cheese in each. Just before serving, drizzle some pesto over the cheese. Microwave each plate of about 12 mushrooms for 2-3 minutes on high, just to warm them and not to cook too much. Garnish the tops with chopped parsley, and serve. Great served at room temperature. |
