1 cup Arborio rice
2 cups water or vegetable stock
1/2 to 1 teaspoon fine sea salt
1 cup cooked chicken, turkey, or tuna
1/2 cup Vidalia Onion Dressing by Oak Hill Farms, regular or light
dark green leaves of lettuce or spinach
In batter bowl or "ugly pot", combine rice and water. Cover. Microwave on high for 5 minutes, then on half power for 15 minutes. Fluff with a fork, add salt as desired. Cool. Toss in chicken and the dressing. Garnish and serve on a bed of cold lettuce leaves.
