Ingredients: 1/2 cup real butter 1 cup sugar, divided 2 eggs 1 cup all-purpose flour 1 teaspoon baking powder 9 ripe apricots, cut in half 1 teaspoon orange zest 1 tablespoon butter 1 tablespoon brandy or apricot nectar or apple juice Directions:Soften the butter for 30 seconds on half power in microwave. Cream it well with the first 1/2 cup of sugar. Whisk in eggs until light colored. Whisk together the flour and baking powder, and then stir into the egg mixture. Pour into a buttered and floured square cake pan, or use a non-stick one. Press the apricots into the batter skin side down. Place in each half a dot of butter and brandy or juice. Sprinkle with the remaining 1/2 cup of sugar and orange rind. Bake in 350 degrees oven for 30-40 minutes. |
