Ingredients: 6 large potatoes 1 cup chopped bacon 1 cup chopped onions 2 cups water 3 tbs cornstarch 1/2 cup vinegar 2 tablespoons sugar 1 tsp salt 1/2 tsp pepper 1/4 cup each pickle relish and chopped pimento Directions:Boil potatoes, then refrigerate till cool. Peel and slice. Chop bacon and onion fine and brown in skillet till bacon is crisp. Do not drain. Add cornstarch mixed with water to bacon grease, stirring till mixture thickens. Add remaining ingredients, and simmer for several minutes. Stir in sliced potatoes, and simmer till hot. |
