Ingredients: 1 quart milk 1 piece of lemon rind 1 cinnamon stick 1/4 teaspoon salt 8 egg yolks 1 1/2 cup brown sugar 1/4 cup water 1/3 cup corn starch Nutmeg and/or cinnamon Directions:1. Add salt, lemon rind and cinnamon stick to milk. Bring to a boil. Reduce heat and simmer for about ten minutes, stirring occasionally. Let cool. Remove cinnamon and lemon peel. 2. Beat egg yolks with an electric mixer until they are fluffy. Continue beating and gradually add sugar until it is completely mixed. Gradually add milk to mixture until you have a smooth consistency. Place the mixture in a double boiler (high heat) and begin to cook, stirring occasionally until it`s bubbling hot. 3. Mix corn starch with water and add to mixture - stirring constantly - until it thickens. The mixture should be very thick. Add more cornstarch mixed with water as needed to achieve the right consistency. 4. Add vanilla and stir. Pour into individual serving bowls. Chill completely in refrigerator. Sprinkle nutmeg or cinnamon on the top just before serving. |
