Ingredients: 4 extremely ripe plantains 1/4 cup light Bacardi rum 1/2 cup packed brown sugar 5 tablespoons butter ground cinnamon to taste
Directions:Preheat oven to 350. Place the plantains in a covered baking dish. Drizzle rum on plantains. Season with sugar and cinnamon. Place pats of butter evenly on plantains. Cover and bake 20 to 25 minutes. Turn the plantains over, baste, and continue baking uncovered for about 15 minutes. This will allow the plantains to turn golden brown. |
