Ingredients: 4 medium red potatoes, unpeeled and cut into 1/2-inch cubes Peanut oil for frying 1/3 cup mayonnaise 2 cloves garlic, minced salt and pepper to taste parsley
Directions:Saute the potato cubes in hot peanut oil at 375 F until golden brown. Meanwhile, mix mayonnaise, garlic, and parsley. Add salt and pepper to taste. Remove the potatoes from the oil and drain thoroughly, patting lightly with a paper towel to remove any excess oil. Lightly toss the hot potatoes with the mayonnaise mixture. Serve immediately. |
