400 g ground veal (or beef)
4 egg yolks
200 ml cream
4 ml salt
dash of four-spice powder or white pepper
fresh bread crumbs
1. Mix ground veal, egg yolks, cream and spices in a food processor or a blender: mixture must be really smooth. Form mixture into four hamburger steaks. Don`t make steaks too thick.
2. Coat steaks in fresh bread crumbs and fry in clarified butter on both sides until browned and done.
