Ingredients: about 430 g can of peas (250 g of peas) 1 tbsp flour salt 2-3 tsp sugar butter 25-50 ml cream Directions:1. Strain peas and reserve the liquid. There should be about 250-300 ml of liquid, if not, add some water or vegetable stock. Mix flour thoroughly with liquid and pour the mixture in saucepan through a strainer. 2. Bring mixture to the boil and simmer for 4-5 minutes stirring continually. When the sauce has thickened, strain it once again to make sure there are no lumps in it. 3. Add peas into sauce and reheat it stirring very gently with a spoon, not to break the delicate peas. Season with a pinch of salt and sugar, sauce should be quite sweet. 4. Add some cream to soften the taste and bring sauce to the boil once more. Finally add a pat of butter to enhance the taste and make the sauce shiny. Serve sauce on Christmas dinner with ham, turkey, etc. |
