Ingredients: 1 1/2 cups sour cream 1/4 cup sliced green onions 12 ounces Lean Roast Beef, cut into bite-sized pieces 1/2 pound chunk Hot Pepper Cheese, shredded 1/2 teaspoon salt 1 can fat free refried beans 12 corn tortillas, warmed 1 can enchilada sauce Directions:1. Heat oven to 350 F. Stir together sour cream, green onions, beef, 1 1/4 cups cheese and salt in large bowl. 2. Spread 2 tablespoons refried beans over each tortilla; top with about 1/4 cup beef mixture. Roll up tortillas. Place, seam-side down, in ungreased 13x9-inch baking pan. Cover with aluminum foil. Bake for 15 minutes. 3. Uncover; pour enchilada sauce evenly over tortillas. Continue baking, uncovered, for 12 to 15 minutes or until heated through. 4. Sprinkle with remaining cheese. Continue baking for 1 to 2 minutes or until cheese is melted. |
