Ingredients: 2 lbs scallops 2 cups white wine 1/4 cup butter 1/4 cup shallots (fine chopped) 24 mushroom caps (finely sliced) 2 tbsp. parsley 2 tbsp. flour 2-4 tbsp. whipping cream 1/2-1 cup breadcrumbs Butter Directions:Wash scallops. Simmer in wine for 5 mins. Drain and reserve liquid. Melt butter. Saute shallots, mushrooms and parsley. Stir in flour. Add reserved liquid and whipping cream. Cook until slightly thick. Stir in scallops. Place in greased shallow casserole dish. Top with breadcrumbs and dot of butter. Broil until lightly brown. |
