Ingredients: 1 can low fat, low sodium chicken broth 2 tsp. lemon zest, optional 1/4 tsp. pepper 1/4 tsp. dried oregano 1 cup uncooked rice 1/2 cup diced red or green pepper 1/2 cup frozen peas 3 Tbsp. chopped fresh parsley 1/2 tsp. salt, optional Directions:In measuring cup, combine chicken broth with enough water to equal 2 cups. Transfer mixture to medium pot; add salt, pepper and oregano. Over med. heat, bring mixture to a boil. Add rice and diced pepper; return mixture to a boil. Reduce heat, cover and cook 15 min. Add peas and cook until rice is tender and liquid is absorbed, about 3 min. Remove and add parsley. A good fat-free side dish. |
