Ingredients: 2 cups finely chopped red onions 2 tablespoons olive or vegetable oil 1/3 cup red wine vinegar 1/4 cup chopped red pepper 2 tablespoons minced parsley 2 cloves garlic, minced 2 tablespoons EqualR SpoonfulT 1/4 teaspoon salt 1/4 teaspoon pepper 1 (15-ounce) can great northern beans, rinsed, drained 1 (15-ounce) can black beans, rinsed, drained Red pepper rings
Directions:1.Saute onions in oil until crisp-tender in medium skillet; remove from heat and cool until warm. 2.Stir vinegar, red pepper, parsley, garlic, EqualR SpoonfulT , salt and pepper into onions. 3.Pour onion mixture over combined beans in bowl; mix well. Garnish with pepper rings. |
