Ingredients: 3 lbs. sweet potatoes, cooked, peeled, and cut-up 1 cup brown sugar 1/4 tsp. salt 1 cup apricot nectar 2 tsp. grated orange peel 2 tsp. butter 5 tsp. cornstarch 1/8 tsp. cinnamon 1/2 cup hot water 1/2 cup pecans, chopped Directions:Put sweet potatoes in 9x13 baking dish. In saucepan, combine sugar, cornstarch, salt and cinnamon. Stir in apricot nectar, water and orange peel. Bring to boil, stirring constantly. Cook and stir for 2 minutes. Remove from heat; stir in butter and pecans. Pour over sweet potatoes. Bake, uncovered, at 350 F for 20 to 25 minutes or until heated through. |
