Ingredients: 2 T. olive oil 2 cloves garlic, minced 1 can (14 oz) artichoke hearts, drained, reserve liquid 3 cups water 1/2 cup fresh Italian parsley 2 cups long grain rice salt to taste pepper to taste Parmesan Cheese Directions:Heat oil in large saucepan. Saute garlic 5 minutes. Cut artichokes in quarters. Add to pan and saute 5 minutes. Add artichoke water, water, parsley, rice, salt and pepper. Stir and bring to a boil. Lower to a simmer. Cover and cook 30 minutes. Remove from heat and let stand 5 minutes. Add parmesan cheese and serve. |
