Ingredients: 2 1/2 cups of flour 1 1/4 cup of sugar 1 1/4 cup of soft butter 1/2 teaspoon salt 1 whole egg and 1 egg yolk 1 teaspoon vanilla extract 1 1/2 teaspoon baking powder 1/4 cup chopped candied ginger (optional) Water Directions:1. In a bowl mix flour, sugar, salt, baking powder, 1 whole egg, vanilla, and butter. 2. On sheets of waxed paper or plastic make three 6-inch rolls. Refrigerate for up to a week before baking, but chill for at least 2 hours. 3. Preheat oven to 350 F. In a cup mix egg yolk with 2 tablespoons water. 4. Cut chilled dough into 1/4 inch thick rounds, and place 1 inch apart on a greased cookie sheet. Brush each cookie with the egg/water (eggwash will allow cookie to brown quickly) mixture and press candied ginger on top. 5. Bake for 10 minutes or until lightly brown. Remove with a spatula to a rack to cool. |
