Ingredients: 6 medium potatoes 1/4 cup finely chopped onion 1 tsp salt 1/8 tsp pepper 1/2 cup Italian salad dressing 1/2 cup mayonnaise 1/2 cup celery, chopped 2 hard boiled eggs, chopped
Directions:1. Cook unpeeled potatoes until tender. Drain and cool. Peel and cut into bite size pieces. 2. Combine in bowl with potato pieces and onion. Sprinkle with salt and pepper. 3. Mix with Italian salad dressing. 4. Cover and chill for at least 2 hours. Prior to serving, coat marinated potatoes with mayonaise. Then stir in celery and eggs. |
