Ingredients: 2 flounder, skinned and filleted 3 oranges Lettuce heart Salt and pepper Juice of 1 lemon Butter Paprika French dressing Orange mayonnaise Directions:Season the flounder fillets with salt, pepper, lemon juice and the juice of half an orange. Add a little finely grated orange rind and roll the fillets from head to tail. Place the fillets in a buttered ovenproof dish, arranging them so that they will not unravel. Dot with butter and cover. Place in the center of a moderate oven (350 F); leave to get cold. When cold, drain , place on a dish, coat each roll with some of the orange mayonnaise, then garnish with a sprinkling of paprika. Remove the peel from the remainder of the oranges and slice the flesh. Dip the orange slices in French dressing and arrange them on a lettuce border surrounding the fish. Serve immediately. |
